Parents do not need to join. We’ll be making the batter. Your family can bake the muffins when you have time to safely supervise your children at the oven. Please make sure the apples are grated in advance.

Apple Honey Muffins

Recipe from the Forward, September 2020.

Makes 12 muffins. (We encourage you to bake extra to bring to family, friends, or our neighbors at Neighbors Link.)

Supplies:

  • 2 cups all-purpose flour (or ½ and ½ AP and whole wheat)
  • 1 tablespoon baking powder
  • 1/2 teaspoon table salt
  • 1 large egg
  • 1/3 cup honey
  • ½ cup white sugar
  • 3/4 cup whole milk (use a substitute if you’re making parev muffins)
  • 1/4 cup apple juice
  • 1/4 cup vegetable oil
  • 2 apples, grated on a box grater (or shredded in a food processor)
  • 1/2 cup walnut pieces (optional)

For the topping:

  • 3 tablespoons unsalted butter
  • 5 tablespoons brown sugar
  • 5 tablespoons all-purpose flour
  • 1 tablespoon cinnamon
  • pinch of salt

Hardware:

  • 3 large bowls
  • Large wooden spoon
  • 1 small bowl
  • Fork
  • Clean kitchen towel (for squeezing the juice out of the apples)
  • 12-well muffin tin
  • 12 paper muffin liners
